What can you scramble when you can’t eat eggs? Try tofu! I was a skeptic at first, but after giving it a shot, I highly recommend this recipe from Nora Cooks for breakfast, lunch, or dinner.
Best of all, scrambling tofu doesn’t take any longer than eggs.
My notes on this tofu scramble recipe
- Dairy milk works well in place of almond or another variety. Alternatively, I’ve made it without any milk at all.
- Nutritional yeast is typically found in the whole foods aisle of your grocery store.
- I’ve melted both vegan and dairy cheese on top, and either tastes excellent!
