Is it dessert? An afternoon snack? Breakfast? Whatever you choose, I wrote up the ingredients and directions, then grabbed a piece of this simple apple cake from my kitchen and didn’t feel bad about it.

A few years ago, I searched for the closest torta di mele recipe to satisfy my husband’s craving for a slice of Nonna’s. After testing a few recipes and making some changes to one that’s close, I came up with this.

Golden and crispy on the outside, dense and moist on the inside. Though the recipe makes 12 servings, this simple apple cake has the tendency to disappear before you know it.

Over the weekend, we joined our friends for a fish fry, so I brought this apple cake along, and—like any good guest—I left a few slices behind so my husband could enjoy it for breakfast.

Simple Homemade Apple Cake Recipe

Prep time: 15-25 minutes | Cook time: 60 minutes, 10 minutes in pan + cooling

Total Time: approximately 1hr and 35 minutes

Servings: 12

Ingredients

  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg (optional, though tasty)
  • 3 cups chopped and peeled apples

Directions

  1. Peel and chop your apples, then preheat your over to 350°. Lightly grease and flour a 10-inch Bundt pan. I use margarine.
  2. In a large bowl, beat the sugar, oil, eggs, and vanilla until well-mixed.
  3. Combine the flour, salt, baking powder, and spices in a medium bowl.
  4. Stir the dry ingredients into the oil mixture a bit at a time. The batter may seem more dough-like, but that’s fine.
  5. Fold in the apples and transfer to the Bundt pan.
  6. Bake it on the middle rack for 60 minutes. It’s ready to come out once a toothpick comes out clean.
  7. Let it cool for 10 minutes in the pan before transferring to a cooling rack.
